Bed Food

BED FOOD. The other day I was looking for a nice recipe since I wanted to make a soup for me and Bou, since we had scheduled a bed-dinner-date that evening. I was searching for a while until I stumbled upon a recipe that looked quite interesting. I had absolutely no idea what it would taste like but after a really quick cooking session (thumbs up!) I could finally taste it and it tasted so delicious! Therefore I thought I had to share the recipe here with you guys, but if you’re Swedish you can check out the recipe here.

1 yellow onion
2 pieces of garlic
400 grams of sweet potatoes
1 tablespoon of oil
0.5 chili (we added 1, spicylicious!)
500 grams of crushed tomatoes
0.5 teaspoon of salt
0.5 dl red lenses
4 dl coconut milk (light)
2 vegetable broth
3 dl of water

1. Cut the onion and garlic. Peal and cut the sweet potatoes into pieces. Put the onion and garlic together with some oil in a pan and fry until soft. Cut the chilli to fine pieces and add it to the pan.

2. Add the rest of ingredients and let boil for 15 minutes.

3. Use a mixer to make the soup smooth and add extra salt and pepper if needed.

4. Enjoy!
